Healthy Banana bread delight

This heavenly delight is sugar free, honey free, sweetener free, wheat free, dairy free and may  help you lose weight and lower blood pressure.

The secret to the health benefits of this wonderful treat is the black eye beans used to make it.

Black eyed beans originated from Africa but what most people don’t know about this bean is that it is extremely healthy and very versatile. You can make your own black eyed bean flour at home.

3 dessert spoons of black eyed bean flour

6 very ripe lady finger bananas

3 eggs

1 teaspoon of bicarbonate of soda

1 lime or lemon

1 cup of diced dates

1 cup of raisins or sultanas

2 cups of walnut

2 teaspoons of grated ginger or 1 teaspoon of ginger powder or a few drops of ginger oil


Blend the eggs, bananas and black eyed bean flour into a smooth mixture in a blender.

Add the bicarbonate of soda, ginger and juice of the lime or lemon and blend for 30 seconds 

Pour into a baking dish. Add the dates, sultanas, raisins, walnuts and mix through.

Bake at 180 degrees for 35 minutes.

Leave to cool down and serve.

It can be kept refrigerated or frozen to last over a few days or weeks. Have this for breakfast or lunch with a cup of black tea.
